Ingredients

  • 2 cups of breadcrumbs or stale bread torn into small pieces
  • 2 cups of kimchi, chopped
  • 1/2 cup of kimchi juice
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 tablespoon of soy sauce
  • 1 tablespoon of sesame oil
  • 1 tablespoon spice blend
  • 2 cup vegetable stock

Method

  1. Preheat oven 350’
  2. Heat a large skillet over medium heat and add the chopped onion. Cook until the onion is soft and translucent, about 5 minutes.
  3. Add the minced garlic and cook for another 1-2 minutes until fragrant.
  4. Add the chopped kimchi to the skillet and stir well to combine with the onions and garlic.
  5. Cook for about 5-7 minutes, stirring occasionally.
  6. Add the breadcrumbs to the skillet and toss.
  7. In a small bowl, mix the kimchi juice, soy sauce, vegetable stock, blend and sesame oil.
  8. Pour this sauce over the stuffing mixture in the skillet and stir to combine. You may need to transfer it to a bowl if your skillet cannot fit the mixture.
  9. Transfer the stuffing to a baking dish and bake for 30min. Remove from oven and it is ready to serve!
  10. Serve hot and enjoy!
