What is Pairing Rituals?

LXV is a boutique winery in Paso Robles founded by Neeta and Kunal Mittal. Pairing Rituals brings together three of our Bordeaux-inspired wines and three spice blends built to sit beside them — the same wine-and-spice tasting that USA Today and Wine Enthusiast named one of the country’s best, boxed for your own table.

Pour. Taste the wine. Coat a mild cheese with the spice, taste it, then return to the wine. The second sip is a different wine. That shift is the ritual — and it is the whole point.

About Neeta Mittal

Neeta Mittal is the co-founder of LXV Wine and the creator of the Spirit of India tasting. A Wine Enthusiast Future 40 Tastemaker, she built the pairing programme out of her own kitchen — her mother’s garam masala is still in the Butter Chicken blend — and has spent fifteen years proving that spice belongs on a wine list.

Dark plum, blackberry and cassis over crushed flowers. Focused and linear, with powdery dark chocolate on a mouthwatering finish.

Neeta’s mother’s garam masala, tomato, mango powder, ginger, garlic, fenugreek, smoked paprika and a dash of Kashmiri red chilli, on a base of chickpea flour and milk powder.

The blend’s creamy, aromatic warmth softens the wine’s linear edge — the cassis rounds out and the chocolate note lengthens.
