Paso Is Stirring (Not Shaking) Things Up
—
And I Got to Judge It
Wine town? Yes.
Only wine town? Not anymore.
Last night, Paso Robles pulled a fast one on its reputation—and I was lucky enough to be right in the middle of it. I was invited to judge a cocktail competition at The Alchemist’s Garden, and let me tell you… the drinks weren’t the only things with depth.
Mixologists from The Alchemist and other local favorites came to play. The rules? Make a cocktail. Tell your story. Hope the judges (including Adam Montiel, Patrick, and yours truly) are feeling generous and sober enough to follow your tasting notes.
Spoiler: they delivered.
Now, here’s the kicker. While the competition was happening, the restaurant was in full swing. The Alchemist team was making cocktails for the event and their tables. They were waitressing, bartending, charming diners, and still finding time to torch rosemary sprigs like it was no big deal. That’s not multitasking. That’s hospitality ballet.
The Two That Stopped Me Cold
One cocktail came in loud—a total showstopper. Sexy, creative, but balanced. Like if a Negroni and a fashion week model had a love child.
The other was quiet. No garnish circus, no elaborate story. Just a drink with such soul, we all paused. Sometimes, the glass is the mic drop.
But Why Should You Care?
If you’re a food and wine lover visiting Paso, listen up.
We know you came for the Bordeaux blends (hi, we make those), the rolling hills, and the long romantic swirl of a perfect Cab Franc. But Paso’s growing into something richer—cocktails, chefs, spice pairings (again, hi), and experiences that hit all five senses. And possibly your sixth.
Here’s Where It Gets Personal (And Delicious)
At LXV, we live for this kind of energy. We take wine and pair it with spice—not just for fun, but to explore texture, balance, and yes, that magical alchemy between flavor and feeling. It’s wine tasting… but with a pulse.
So if you’re planning a trip to Paso, put us on your map. Let’s taste, talk, and take your palate somewhere it hasn’t been before
.
Come for the wine. Stay for the spice. Leave a little changed.
