Neeta and Kunal Mittal welcome you to experience LXV Wine. LXV is consistently recognized for the elegant, yet expressive, small-lot wines and for the unique Spice Pairing experience.

Sourcing Vineyards

Focussed on Bordeaux varietals with Sangiovese in play, we are ardent followers of post-modern winemaking, with one foot very firmly planted in the old world. Some vineyards of distinction that we work with, in Wilow Creek of Paso Robles, are G2 North, Denner, Jada, and Gateway. Chasing cooler climates we venture south with Bien Nacido, White Hawk, Portico Hills, and Vogelzang.

Estate Vineyard - Armaa.N (Willow Creek)

Farmed by Bill Gibbs (G2), the newly planted Armaa.N vineyard, in the heart of Willow Creek, boasts regenerative farming practices and unparalleled clones of To Kolan for Cabernet Sauvignon, Loire Valley for Cabernet Franc, Brunello for Sangiovese, and the best Paso Robles Syrah clone of 470.

Wines

Drawing inspiration from our travels to Bordeaux, Burgundy, Champagne, Tuscany, and other old wine regions of the world, we strive to make wines that are old-world in style with great emphasis on structure, particularly balance and acidity.

The two wines of distinction at LXV: Cabernet Franc and Sangiovese.

The spice pairings are a deep dive into the role of the terroir as well as a sensory interplay of dynamic flavors. Each LXV Wine is paired with a blend of flavors, curated in-house, that mirrors, complements, and, sometimes contrasts flavors in the wine, thereby heightening the wine tasting. WINE TASTING & SPICE PAIRINgs

Deconstruct wine with the help of exotic seasoning from around the world

With the purpose of deconstructing the wine for texture, structure and phenolics, every LXV wine is meticulously paired with seasonings, sprinkled on a neutral cheese, to match, complement and/or contrast the highlights of the wine.

The complex web of flavors includes familiar seasonings such as herbs and baking spices; exotic ingredients such as black truffle salt, miso, rose hips and rose petals; and some very unique elements such as nutritional yeast, mandarina hops, and Persian Lime.

An example of a dynamic wine-seasoning pairing at LXV:

Wine: Left bank inspired Bordeaux blend (Cab- Merlot- PV)

Highlights: vibrant bouquet of violets and lilacs, good acidity, firm tannin,  bright red fruit, savory

Complementary pairing– Hibiscus, Lavender, Coriander, Cumin, Persian Lime, Black Pepper, Black Garlic

Contrasting paring – Lapsang Souchong tea, sarsaparilla, Paprika, Fennel, Rosemary, Marjoram
