In a mixing bowl add Bengali Posto (LXV Spice blend), maple syrup, miso paste, 1 tsp salt and mix until incorporated. Add the chicken thighs to the bowl and let marinate for minimum 2 hours.
Step 2 | While the chicken is marinating, clean the mushrooms with a damp paper towel. Slice down the middle. Heat large sauté pan to medium high heat. Add the mushrooms, stirring occasionally.
Step 3 | Once the moisture has been released and the pan is dry again, add 2 tbsp of olive oil and 1 tsp of salt. Cook for 7-8 minutes. Remove from heat. Add parchment paper on baking sheet and place the cooked mushrooms on the sheet, making sure they are not overlapping each other. Bake the mushrooms for 1 hour.
Step 4 | Once the mushrooms are finished, let cool. Turn up the heat on the oven to 375 degrees. Add the chicken to the baking sheet lined with parchment paper. Bake for 30 minutes.
Step 5 | Serve with white rice topped with sticky chicken and mushroom jerky.
