First, they took covid seriously, had limited tastings and people were well spread out. I appreciated how well they did this. We arrived at about the tome the owner was leaving the tasting room. She stopped and talked with us for a few minutes. Was a fun conversation and you could tell she really cared about the wine and running the business. We arrived early, but as luck would have it, another group called and was running late. So they just swapped our times. Didn't expect that but it was great. We were helped by Nicole. She was alone at the store, managing three different tastings and helping people who didn't have reservations asking if they could come in (there was no space unfortunately). That probably sounds like a lot to be doing, and it definitely was, but it made no difference to the quality of the tasting experience. This was probably my favorite tasting experience anywhere. Nicole was very knowledgeable about wine in general and their wine in particular. She gave us a great narrative, knowledge, and things to look for in the wine. She answered our questions without hesitation. It was quick conversation either. She spent time with us, and with the other patrons there. Nothing was rushed, nor were we ignored at any point. We got the tasting that included spice pairings. This was done by putting spice blends on a neutral sheep's milk cheese. They were all good, and they definitely changed the experience of the wine. Honestly, I much prefer this to standard cheese or chocolate pairings. The most similar tasting I've done was probably Tamber Bey in Napa, which uses savory cookies. But this was it's own unique thing for sure. And the spice blends were really good. I ended up buying two of my favorites for use at home. I think they would make some great seasoning for pork chops and the like. So how was the wine? Pretty spectacular. They obviously put care into crafting the blends. They weren't generic tasting wines at all. Bought a couple of bottles. They weren't cheap, probably more than I'd usually spend, but breaking that open to remember the trip and specifically this tasting made it well worth it to me. And supporting a small, woman and POC owned business is an added bonus. Will go back and will definitely recommend to any of my friends going to the same area. read less - 2/19/2021

Good thing, too, because we were traveling from the Bay Area and it was a hot pick to visit based off some initial research. Nicole was a gem to chat with and guided us on one of our most unique (and safe, and outdoor, and all COVID-protocol-esque) wine experiences. The concept of pairing wine with seasonings (via cheese squares hugged warmly amidst the seasonings) was something of allure for us, and boy, it did not disappoint. The owners have established an amazing space for the employees to run wild with their creative juices to pair the wines with bold flavors of amazingness such as black truffle salt, white sesame, ginger, and lemon peel...just to name a few. When we got there we had to wait for a electronic gate to let us in. When it opened we were greeted by a friendly doggy that lived on the property. There were multiple dogs there but all were trained and super friendly. It was also quite a treat because right where we did our tasting, we had an amazing view of the vineyard in the distance. All their wines were great and I really think it boils down to your taste. I personally liked the Jewel the most with its complexity but you really do have to try doing the spice pairing with all the wines to get the true experience. Everyone here is extremely knowledgeable about the wines served and do an amazing job explaining how the profiles of the wines change with the associated spice. I liked the Jewel because the spices reminded me of flavors in Ramen so I definitely bought a bottle for a Ramen night and was super satisfied!If you aren't a native to the Bay Area you are trying to Wine Taste, I do feel like people try to gravitate towards the more well known wineries in Napa. What people don't realize is that there are so many other amazing areas for wines too. Different areas can change the flavor profiles of the same type of wine so it's fun to visit other areas like Paso which has so many wineries to try out. But definitely don't skip out on LXV. However, should you wish to remain downtown, there are quite a number of tasting rooms that are situated in the area. LXV is an example of an urban tasting room concept done the right way - so much so that in 2016 it was named by USA Today as one of the Top 10 tasting room experiences in America.The business is owned and operated by the husband-wife team of Neeta and Kunal Mittal, though I sense that the business largely resulted from Neeta's vision. Both fell in love with the area while wine tasting and eventually bought land in the Willow Creek appellation in Paso Robles. The land and its people reminded her of her home country and eventually quit her career in engineering for her passion in winemaking. Her contribution to the tapestry of Paso Robles' wine culture is the uniqueness in her tasting room experience: the option of doing a spice pairing for the wines. I wouldn't imagine going here and *not* partaking the appropriate spice pairing while drinking wine.LOCATION: On 13th Street, right across from one of my most favorite places on Earth. Serrano Wine is also right across it on Pine. The parking situation is also good as it has its own dedicated parking lot but street parking is also available. I did my tasting in September 2020 when SLO County is in the purple tier so I had to do my tasting on the outside patio during the middle of a heat wave. The ladies were very hospitable and some of the nicest tasting room staff I've ever encountered. I eventually cracked this at an Italian restaurant back in SD with a pasta with red sauce and Sicilian meatballs and the pairing worked *wonderfully*. Even my friend/dining companion complimented on how wonderful the wine tasted. However, my favorite wine/spice pairing of the tasting was the cabernet/silk road because the tannins brought accentuated some of flavors of the herbs, specifically basil. I really love the uniqueness of the concept and I would return just for this to experience tasting wines here not in the middle of a pandemic. However I see myself buying more of "The Spell" to add to my wine fridge. Reservations made in advance as required on their website. I picked this winery as it was different and offered a spice pairing with an Indian flare (I love Indian food). The husband and wife owners are both from India so it was a no-brainer.Unfortunately, our reservation was overbooked according to Neeta (wife), but she was able to accommodate us and bent over backwards to do so. We were sent o the Ranch (reserved for members only) and provided a private table overlooking the vineyard. Since we hadn't eaten yet, Neeta made a charcuterie for us to enjoy.Our server, Melanie, was so friendly and knowledgeable which made the experience even more inviting. As for the wine, all five tastings we had were extraordinary and paired so well with the spices. This was a taste bud's delight.We got to talk briefly with both owners and the husband, Kunal, gave us a rundown of their history.
